What is more delightful than green tea? We love green tea: the color, the smell and of course the taste. It’s the small things in life. There is nothing better than sipping hot tea on a gloomy day. Or maybe there is: drinking green tea on a gloomy day with a matcha cake. Matcha, for those of you who do not know is fine green tea that is used for cooking. It makes your food green and colorful. Matcha will be our special ingredient of the day.
Green tea matcha cake
Serves 6-8 people
- 200g (2 cups) of whole-wheat flour (T80)
- 75g (2/3 of a cup) of almond powder
- 100g (1 cup) of fine whole-wheat semolina
- 75 cl (25 fluid ounces) of olive oil
- 100g (3 cup) of brown sugar
- 4 eggs
- 1 tablespoon of matcha
- 1 teaspoon of baking powder
Optional: add a mashed ripe banana and replace the sugar with honey. Can be served with vanilla flavored soybean cream with a bit of matcha or some applesauce.
Preheat the oven to 150°C (300°F)
Manually beat the eggs with the sugar until the mixture whitens. Add the dry ingredients and the olive oil. Stir until a homogeneous mixture is obtained.
Oil (olive oil) a loaf pan. Pour the mixture into the oiled loaf pan.
