Tomato “tarte tatin”

Sometimes during winter I really miss summer vegetables, I love winter vegetables, but you know when it’s really cold outside sometimes you dream about a summer meal on the porch or during a picnic. Actually I really like summer pies, with lots of Mediterranean vegetables, that you can take with you and share with people outside.We were asked to make something with tomatoes (I know, winter is not the best season to cook tomatoes– that’s partly why I did this recipe) and I wanted to give some extra flavor to my tomatoes. So, I decided to do a “tarte tatin” with tamatoes!

Ingredients

  • 500g of cocktail tomatoes
  • 50g of sugar
  • 1 onion
  • 2 tablespoon of balsamic vinegar
  • 1 dough

Preheat the oven to 210°C (410°F).

Cut the onion and the tomatoes in the half. Brown the onion in olive oil in a pan. Then add the sugar to 2 tablespoons of water. Heat it in a pan, when the sugar starts to turn brown put the balsamic vinegar on it and stir vigorously.

Put the caramel in a pie pan and place the tomatoes flat side up.

Put the onion on it and place the dough on the top of the onion like the upper part of a pie crust.

Put the pie in the oven for 25 minutes. Put a plate to upside down with the side up resting down on the pie pan. Flip over the pie in one quick movement. Cool before serving.
