Eggplant a la brandade de morue

We rarely eat pre prepared food, and when we do it has to be 100% healthy. This recipe contains one pre prepared food (brandade de morue), but it is actually too expensive for us to make our own (salted cod costs about 30 euros a kilogram). On a student’s budget we, unfortunately, can’t spend that much on fish. We have checked the ingredients and can assure that this is healthy. This dish is typically Nîmois and is one of Clotilde’s favorite foods. She could eat it a pot to herself everyday.

Serves 2 – 4 people

Ingredients:

  • 2 eggplants
  • 1 pot  (200g) of brandade de morue (dish of flaked sea cod)
  • Olive oil
  • Garlic
  • Unrefined sea salt

Cut the eggplants in half vertically. Cut the flesh and sprinkle with unrefined sea salt. Put aside for half an hour and let sweat. Rinse the eggplant. Sprinkle olive oil on each half (about 1 tablespoon per eggplant).

Bake at 180C (300F) for about half and hour. If the eggplant is too dry, sprinkle some water on it. The eggplant needs to be cooked and soft when finished cooking.

Remove the eggplant from oven and scrape/flatten the center of each eggplant is a bit hollow. Add 50 grams of brandade de morue to each eggplant. Bake for 10-15 minutes at 180C (300F)

Serve hot.
